    1. Preparation of Ingredients Soak the glass noodles in lukewarm water for about 30 minutes until they become flexible . Clean and trim the spinach, then blanch it quickly by pouring boiling water over it, rinse in cold water, and squeeze out the excess moisture . Thinly slice the onion and julienne the carrot into fine strips . Remove the stems from the shiitake mushrooms and slice them thinly . Slice the beef into 4cm long, thin strips .

    2. Seasoning and Cooking Noodles In a deep pan, combine 500ml water, 5 tbsp soy sauce, 3 tbsp cooking wine, and 3 tbsp sugar, and bring the mixture to a boil . Add the soaked noodles to the boiling liquid and stir frequently until the sauce is fully absorbed and the noodles are glossy and chewy . Once the noodles are cooked and seasoned, stir in 2 tbsp of sesame oil for flavor and to prevent sticking .

    3. Stir-frying Meat and Vegetables In a separate large pan, heat some oil and stir-fry the julienned carrots and onions until they soften slightly . Add the sliced beef, mushrooms, 1 tbsp minced garlic, 1 tbsp minced green onion, and 3 tbsp soy sauce. Stir-fry over high heat until the beef is fully cooked . Add the blanched spinach and 1.5 tbsp oligosaccharide to the pan, and quickly toss everything together .

    4. Final Assembly and Finishing Transfer the cooked noodles into the pan with the stir-fried meat and vegetables and mix thoroughly so all components are evenly distributed . Move the mixture to a large bowl, then add 2 tbsp ground sesame and 1 tbsp sesame seeds, and give it a final mix before serving .
