How to Make Sausage Kimchi Fried Rice

1. Preparation Slice the sausages into thin rounds . Chop the green onions finely . Place the kimchi in a bowl and cut it into small bits using scissors to avoid staining the cutting board .

2. Stir-frying the Aromatics and Meat Heat cooking oil in a pan and add chopped green onions and sliced sausages . Stir-fry until the ingredients turn golden brown and the fat is rendered . Add sugar to the pan and stir to allow it to caramelize and coat the ingredients . Pour soy sauce around the edge of the pan to create a smoky, burnt soy sauce aroma .

3. Cooking the Kimchi and Rice Add the chopped kimchi to the pan and stir-fry well . Mix in the red pepper powder for a deeper color and spicy kick . If the pan becomes too dry or the seasoning clumps, add a splash of water to help everything mix evenly . Turn off the heat, add the instant rice, and break it apart thoroughly using a ladle or spatula .

4. Finishing Touches Turn the heat back on and fry the rice until you hear a sizzling sound and the flavors meld . Sprinkle sesame seeds over the rice . In a separate pan, fry a sunny-side-up egg with a crispy bottom . Transfer the rice to a plate, top with the egg, seaweed flakes, and extra ground sesame seeds for serving .
