1. Making the Broth Base

Place bite-sized pork pieces and 540ml of water into a pot .

Add 1 tablespoon of salted shrimp to the pot and bring it to a boil . Boiling the meat with salted shrimp first helps extract the pork fat and creates a deep flavor base .

2. Vegetable Preparation and Simmering

While the broth is boiling, thinly slice the green onions and chop the Cheongyang chili peppers .

Once the broth boils, reduce to medium-low heat and simmer for at least 10 to 20 minutes . If the water level drops significantly during simmering, replenish it with a little more water .

3. Seasoning and Finishing

Add the sour kimchi to the simmering pork broth .

Season with 1 tablespoon of soup soy sauce, coarse and fine red pepper powder, and 1 tablespoon of minced garlic .

Add the prepared green onions and chili peppers to the pot . For a professional look, sprinkle a little extra red pepper powder right before serving to maintain a vibrant color .
