    Cut zucchini, onion, carrot, and potatoes into thin matchsticks .

    Finely slice the green onions and Cheongyang chili peppers .

    Roll the softened kelp (Dashima) like a sushi roll and cut into thin strips .

    Thoroughly rinse the Kalguksu noodles in cold water to remove excess flour until the water runs clear .

    In a pot, combine 1.1kg of the kelp soaking water with anchovy powder and bring to a boil .

    Add the rinsed noodles to the boiling water and stir gently .

    Incorporate 80g of the prepared kelp strips and the potato, onion, and carrot strips into the soup .

    Season with soy sauce for soup and salt to taste .

    Add the zucchini, green onions, and chili peppers, and continue to cook until vegetables and noodles are tender .
