How to Make Japchae (Korean Glass Noodle Stir-fry)

    1. Preparation Soak the glass noodles in water for at least 30 minutes to soften them . Season the pork with soy sauce, mirin, sugar, minced garlic, sesame oil, and black pepper, then set it aside . Slice the onion, carrot, paprika, and shiitake mushrooms into thin strips .

    2. Sautéing Vegetables Sauté the sliced onion in a pan with a little oil, salt, and pepper until slightly translucent, then remove from the pan . Sauté the carrot strips with a pinch of salt until softened . Quickly stir-fry the paprika and remove it to maintain its color and texture . Stir-fry the shiitake mushrooms with oil and a pinch of salt .

    3. Cooking Noodles and Meat In a pan, add 300cc of water and the soaked noodles . Add soy sauce, sugar, mirin, oyster sauce, and starch syrup to the noodles, and boil them until the liquid is almost completely absorbed . In a separate pan, stir-fry the marinated pork until it is fully cooked .

    4. Finishing the Dish Once the noodles have absorbed the sauce, add all the sautéed vegetables and the cooked pork into the noodle pan . Add a handful of fresh chives, a splash of sesame oil, and black pepper . Toss everything together over heat for a final minute until the chives are slightly wilted and everything is well combined . Transfer to a plate and garnish with toasted sesame seeds .
